I’m a bit of a salsa snob.  There are not too many salsas that I really like.  But a few  years ago, I discovered that my neighbor makes salsa that is like crack to me.  She would bring it over & within hours, it would all be gone.  I mean, I’d have it on burritos, eggs, cottage cheese, crackers, etc.  Finally, she invited me over to watch her make it.  She didn’t really have a recipe – just a guide.  Here are the ingredients that I typically use:

  • 2-3 cloves of garlic
  • 2 yellow hots
  • 2 jalapenos
  • 2-3 habaneros (scotch bonnets)
  • 3-4 tomatillos or roma tomatos
  • cilantro
  • salt
  • a large can of crushed or diced tomatos

 

And here is the final product on my lunch.  Here in Arizona, we call these “cheese crisps”.  Cheese broiled over a tortilla & sliced like a pizza.
