Rave Reviews (Vanilla Coconut) cake – BEST CAKE EVER!!!

Ok, I’m not that much into chocolate.  But once, when I was going to make chocolate cupcakes for a party, several people requested this recipe instead…  So it’s not just me.  I do think the pudding probably helps make this recipe very moist.

I first had this cake when my late cousin Georgeanna, served it.

Rave Reviews Coconut Cake (cupcakes)

Amount Measure Ingredient — Preparation Method

1 package yellow cake mix — 2 layer size
1 package vanilla INSTANT pudding mix — 4 serving size
1 1/3 cups water
4 eggs
1/4 cup oil
2 cups coconut
1 cup walnuts or pecans — chopped

Frosting
4 tablespoons butter
2 cups coconut
8 ounces cream cheese
2 teaspoons milk
1/2 teaspoon vanilla
3 1/2 cups confectioner’s sugar — sifted

Blend cake mix, pudding mix, water, eggs and oil in large mixing bowl. Beat at medium speed of electric mixer four (4) minutes. Stir in coconut & walnuts.

Pour into 3 greased & floured 9 inch layer pans.

Bake at 350 for 35 minutes.

I prefer to use a plain cream cheese frosting, since I normally make cupcakes & use a decorator tip to frost them. But here are the directions for the frosting that came with the recipe.

Melt 2 tablespoons butter in skillet. Add coconut. Stir constantly over low heat until golden brown. Spread coconut on paper towels to cool. Cream 2 tablespoons butter with cream cheese. Add milk; beat in sugar gradually. Blend in vanilla; stir in 1 3/4 cups of the coconut. Spread on tops of the cake layers. Stack and sprinkle with remaining coconut. High altitude areas, increase water to 1 3/4 cups and add 1/4 cup flour.
